This is a very quick and simple soup I fixed for about 30 people a couple years ago. It was a winter work party at the camp I run, when the place was under a foot or two of snow and the work was dirty and hard. This hearty but incredibly healthy soup was a huge hit with both the kids and adults.
This is a very quick and simple soup I fixed for about 30 people a couple years ago. It was a winter work party at the camp I run, when the place was under a foot or two of snow and the work was dirty and hard. This hearty but incredibly healthy soup was a huge hit with both the kids and adults.
Serves 6
Ingredients:
1T olive oil
1 medium onion, diced
2 ribs celery, diced
3-4 quarts chicken stock
1/2 large garnet yam or sweet potato, petite-diced
12 oz good quality sausage, 1/4" slice
1 cup pearl barley
2 large handfuls chopped kale
Thyme, salt & pepper
Balsamic vinegar to garnish, if desired

We also throw in a few dashes of hot sauce, but if your eaters prefer a blander soup, leave this out and stick with the balsamic vinegar instead.

Instructions:
- Saute onion in olive oil for about 5 minutes in a large stock pot. Add celery and continue cooking another 5 minutes.
- Add stock, sweet potato, sausage, and barley to the pot. Simmer about 30 minutes or until barley and sweet potatoes are fully cooked.
- Add kale and seasonings (about 1T dried thyme is perfect).
- Serve with a drizzle of balsamic vinegar, if desired.
